Lemon Bars

I made some delicious lemon bars yesterday for when my parents came home. They were one of the best that I’ve made! And from a simple recipe:

INGREDIENTS

  • 2 cups sifted all-purpose flour
  • 1 cup confectioners’ sugar
  • 1 cup butter, melted
  • 4 eggs
  • 2 cups white sugar
  • 1 teaspoon baking powder
  • 1/4 cup all-purpose flour
  • 5/8 cup lemon juice

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch pan.
  2. In a medium bowl, stir together 2 cups flour and confectioners’ sugar. Blend in the melted butter. Press into the bottom of the prepared pan.
  3. Bake in the preheated oven for 15 minutes, or until golden. In a large bowl, beat eggs until light. Combine the sugar, baking powder and 1/4 cup of flour so there will be no flour lumps. Stir the sugar mixture into the eggs. Finally, stir in the lemon juice. Pour over the prepared crust and return to the oven.
  4. Bake for an additional 30 minutes or until bars are set. Allow to cool completely before cutting into bars.

YUMMMM! I actually used a tea strainer to put confectioners sugar on top because I don’t think I have a sifter. Maybe I recommended a good recipe to someone. :)

Hi

I really haven’t been taking pictures lately. There isn’t anything exciting going on. Just warmer weather and such. I’m cleaning my grandma’s apartment today! Not exciting either..huh. Well maybe something will come along soon enough. Keep checking. :)

Food!

Yesterday, I made Oatmeal Chocolate Chip cookies with cinnamon chips in them!  They are sooo good.  And I doubled the recipe, so I froze some of the dough.

Today, my brother and his girlfriend came for a while, but they’re going to Pittsburgh soon.  My mom is making kabobs, marinated vegetable ones and marinated chicken ones.  Delicious!

Babysitting

I babysat today at this really nice house, but usual kids. The lady i work for (my moms best friend) was cleaning her pastors house today, so i watched them there. It’s all stone with real wood floors, a balcony on the upper floor, two separated porches and a huge pond and mud bath in the back. (Theres a pedal boat that we rode around in for a while, then the second time it started to rain so we rushed to get out, and I fell in. Lovely, I know! Luckily, I took extra clothes!) They also have a ton of animals! It’s freaking crazy! 5-6 geese, 4-5 goats, 18 cats just in the main level, tons in the pastors bedroom, and a bunch in the basement! And one is gonna have kittens in the next week. Then they have a HUGE dog with long fur, but underneath its matted. It rarely gets washed/groomed. I feel bad for it. I was extremely itchy and sneezed the whole day and I still am! Gross. Anyway, I got lots of cool shots today.

Gardening

I did a little gardening and mowing today on my family’s property on the mountain.  I thought I would put up a few shots from today!

Cold Front

A sweet cold front moved through tonight. Its going to make 60 degree weather for the next two days! I’m so happy for cooler weather. And it was the source of these shots:

Jimmy Stewart Airport Festival

This is the beginning of my very first photo blog, inspired by Jennifer McKendrick especially. Yesterday I worked for my family business @ the Jimmy Stewart Airport Festival. I captured quite a few planes in flight or on the ground.
